Can bamboo leaves cause ph problems

Hi,I am a newbie to this site, I am absolutely confused regarding my water readings: I have a 1200 gallon koi pond,their are no plants in the pond at all, Its 12' x 5' x 3' deep, I have 3 different types of bamboo overhanging the pond, I have a DIY Filter system, as in 4 big tanks, with different plastic media,and different sponges,and a UV Light, powered by a Aquamax 10000 pump,Two of airstones,in the pond, and one in each of the filter tanks,All Airstones now switched off, I reguarly test my pond water, But over the last 2 months, I have had very low PH , in fact its gone down to ph4, Which is very low, as the normal reading is 7.5-8.0, Ammonia is 0.0, nitrite 0 nitrate 0, But the PH is a real problem, i have done water changes to bring it back in line, but within two weeks, its back down to the low readings, I have spoken to various koi keepers and they havent a clue,As i do hoover out any muck at the bottom of the pond,Which is minimum anyway, Its as if, as soon as ive turned my airstones off for the winter, i get bad PH, I have Bamboo which overhangs the pond, and i do get some leaves that fall into the pond, but i have put a couple of polythene covers to prevent the frosty weather,As i always do, So i would say there is only about 12-32 leaves at any one time, before i scoop them out, Has anyone got any ideas, what causes this, and if any of you have indeed heard about any kind of bamboo that causes acid in the water ??, I am really at my wits end, I told the wife i may have to cut all the bamboo down, but wanted to make sure about this first as it is a nice feature, As my pond is in the ground by 1', and above ground by 2', If anybody has any ideas why this is, please help, Many thanks Mark..
