How can i cool down my tank with out stressing out my fish? I came home this weekend and it was 85-90F... so i changed 10G of the 60G tank with some COLD water Which took it back down to 80... Should i replace more or should i just keep doing these Cold water changed with only 10gals of cold water.

Get some ice blocks in the freezer or bottles of water frozen in your freezer, you can just float it and it will cool it down gradually without stressing the fish with loads of cold water.

High water temperatures normally reduce the dissolved oxygen in the water that can affect both the fish's ability to breath and the biofilter.

I'd suggest you implement a large aeration system ASAP to counteract any deficiencies in dissolved oxygen levels.
