Koi feeding - Thats not right!

Heya all,
I have to say....been to a lot of koi websites etc and took a look at feeding. ALL of them state that you should only feed your fish what they consume in 5 minutes, then remove the left over. I think its a load of rubbish. My fish sometimes only start eating after 10 minutes....and they never eat constantly. They eat a bit...then swim around, then come back a minute later etc etc. Surely its not right what they say about feeding?
Also...I get a bit worried I under feed them....how do you know what the right amount is seeing as the method above is not right!
